BBQ Lentil Pizza

This meal is a win-win in our house. Hans will happily eat just about anything, but BBQ sauce has a special place in his heart. And as much as I theoretically enjoy cooking, I’m looking for a quick and easy meal like this one nine times out of ten.

BBQ Lentil Pizza

Prep Time: 5 minutes    l    Cook Time: 8-10 minutes    l    Servings: 6-8 slices

Ingredients

  • Pizza dough, prepared
  • ½ cup brown or red lentils, cooked
  • ½ cup BBQ sauce, plus 2 Tbsp. for drizzling
  • ½ cup mozzarella/provolone/gouda cheese, shredded
  • ¼ cup baby arugula
  • ¼ cup red onion, sliced
  • ¼ cup pineapple, diced
  • ½ jalapeño, sliced
For serving:
  • 1 Tbsp. cilantro, chopped

Instructions

  1. Preheat the oven to 450°F (or according to your pizza dough instructions). If you are using uncooked dough, stretch it to about 12”. Place the dough onto a flour-dusted baking sheet.
  2. Combine cooked lentils and 2 Tbsp. BBQ sauce in a small bowl.
  3. Spread the remaining BBQ sauce onto the pizza crust, leaving a little bit of space up to the edges. Sprinkle the cheese evenly across the sauce and then top with the remaining ingredients, including small plops of the BBQ lentils distributed across the pizza.
  4. Place the pizza in the oven and cook for about 8-10 minutes (or according to your pizza dough instructions), until the crust is cooked through and the cheese is melted.
  5. Cut into slices, garnish with cilantro, and serve.
