A quick and tasty salad for when it’s too hot to cook. Also a great dish to contribute to a potluck, in our experience!
Peach & Blueberry Salad
Prep Time: 5 minutes l Cook Time: N/A l Servings: 4-6+
Ingredients
For the salad:
- 4 cups Baby spinach (or other greens of your choosing), chopped
- 1 cup Blueberries, rinsed and patted dry
- 1-2 Peaches, diced
- 1 Avocado, diced
- ½ cup Pecans, roughly chopped
- ¼ cup Feta, crumbled
For the dressing:
- ¼ cup Olive oil
- ¼ cup Honey
- 2 Tbsp. Apple cider vinegar
- 2 Tbsp. Lemon juice
- 1 tsp. Dijon mustard
Instructions
- Add all salad ingredients to a large bowl.
- Combine all dressing ingredients in a lidded jar and shake to mix.
- Pour the dressing over the salad, toss to coat, and serve.
