This pizza-inspired dish is hearty and, just like pizza, it is very customizable. The version below is how I typically like to make it, but you could easily sub in any of your favorite pizza toppings (sausage, pepperoni, olives, pineapple, etc.) to make it your own.
Pizza Beans

Ingredients
- 1 Yellow onion, chopped
- 2 cloves fresh Garlic, minced (or 1 tsp. dried)
- 1 (15 oz.) can Tomato sauce
- 1/2 tsp. Salt (or omit/reduce if tomato sauce is salted)
- 1/2 tsp. Red pepper flakes
- 1/8 tsp. dried Oregano
- A sprinkle of dried Thyme
- A drizzle of Hot honey
- 1/2 cup Baby spinach, chopped or torn
- 2 (15 oz.) cans Cannellini beans (or kidney beans if you prefer), drained
- 1 cup Mozzarella cheese, shredded
- 1/3 cup Cottage cheese
- Optional toppings: grated parmesan and/or fresh basil, to taste
- For serving: garlic bread or other toasted bread
Instructions
- Add a drizzle of oil to an oven-proof skillet over medium-low heat. Once hot, add the onion and cook, stirring occasionally, until tender and lightly browned, about 8 minutes.
- If using fresh garlic, add it to the pan and cook until fragrant, about 30 seconds.
- Turn on the oven’s broiler on medium heat.
- Add the rest of the ingredients except for the cottage cheese, stirring to combine. Cook over medium heat, stirring occasionally, until the spinach is wilted and cheese is beginning to melt, about 5 minutes.
- Top with scattered dollops of cottage cheese.
- Move the skillet to the oven and broil until the mixture is bubbling and the cottage cheese is beginning to brown, about 5-8 minutes.
- Remove the skillet from the oven, add your desired toppings, and serve.
