Buffalo Bean Dip

Who needs chicken? This recipe relies heavily on the flavor of the buffalo sauce, so make sure to use one that you like!

Buffalo Bean Dip

Prep Time: 5 minutes    l    Cook Time: 20 minutes    l    Servings: 6

Ingredients

  • In the blender/food processor:
    • 1 1/2 cup some combination of: Greek yogurt, cottage cheese, and/or cream cheese
      • I like 3/4 cup Greek yogurt + 1/2 cup cottage cheese + 1/4 cup cream cheese
    • 1 (15 oz.) can Cannellini beans, drained
    • 1/2 cup Buffalo sauce (increase or decrease to taste)
    • 2 Tbsp. Ranch seasoning
    • Water, if needed to thin the consistency
  •  To mix in by hand:
    • 1 (15 oz.) can Cannellini beans, drained
    • 1 cup Cheddar cheese, shredded
  • Optional toppings: chopped green onions
  • For serving: crackers, tortilla chips, bread, celery, carrots, etc.

Instructions

  1.  Preheat the oven to 375°F and lightly grease a baking dish.
  2.  In a blender or food processor, add the listed ingredients and blend until smooth.
  3. Pour mixture into your prepared baking dish and mix in the rest of the beans and 3/4 of the cheese, stirring until combined. Sprinkle the rest of the cheese on top.
  4. Bake, uncovered, until the cheese is melted and bubbling, about 20 minutes. 
  5.  Remove from the oven, add your green onions, if desired, and serve.
P.S. You can totally add shredded chicken instead of the second can of beans if that’s your preference.
