Who needs chicken? This recipe relies heavily on the flavor of the buffalo sauce, so make sure to use one that you like!
Buffalo Bean Dip
Prep Time: 5 minutes l Cook Time: 20 minutes l Servings: 6
Ingredients
- In the blender/food processor:
- 1 1/2 cup some combination of: Greek yogurt, cottage cheese, and/or cream cheese
- I like 3/4 cup Greek yogurt + 1/2 cup cottage cheese + 1/4 cup cream cheese
- 1 (15 oz.) can Cannellini beans, drained
- 1/2 cup Buffalo sauce (increase or decrease to taste)
- 2 Tbsp. Ranch seasoning
- Water, if needed to thin the consistency
- 1 1/2 cup some combination of: Greek yogurt, cottage cheese, and/or cream cheese
- To mix in by hand:
- 1 (15 oz.) can Cannellini beans, drained
- 1 cup Cheddar cheese, shredded
- Optional toppings: chopped green onions
- For serving: crackers, tortilla chips, bread, celery, carrots, etc.
Instructions
- Preheat the oven to 375°F and lightly grease a baking dish.
- In a blender or food processor, add the listed ingredients and blend until smooth.
- Pour mixture into your prepared baking dish and mix in the rest of the beans and 3/4 of the cheese, stirring until combined. Sprinkle the rest of the cheese on top.
- Bake, uncovered, until the cheese is melted and bubbling, about 20 minutes.
- Remove from the oven, add your green onions, if desired, and serve.
P.S. You can totally add shredded chicken instead of the second can of beans if that’s your preference.
